  • 1 cup Cottage Cheese
  • 2 tbsp Sugar-Free Caramel Syrup
  • 1 tsp Vanilla Extract
  • Pinch of salt
  • 1 cup Keto Chocolate Chips

  • Step 1: Prepare the Base. In a medium mixing bowl, combine the cottage cheese, sugar-free caramel syrup, vanilla extract, and a pinch of salt. Stir until all ingredients are well blended and smooth.
  • Step 2: Portion and Chill. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Place the sheet into the freezer until the clusters begin to firm up, usually about 30 minutes to an hour.
  • Step 3: Shape (Optional). Once the clusters are semi-solid, you can gently roll or shape them into more rounded, uniform balls if desired for a neater look.
  • Step 4: Fully Freeze. Return the clusters to the freezer for at least another hour, or until they are completely solid and ready for dipping.
  • Step 5: Melt the Chocolate. In a microwave-safe bowl, melt the keto chocolate chips. Heat in 30-second bursts, stirring well after each interval, until the chocolate is smooth and fully melted.
  • Step 6: Dip and Set. Dip each frozen cottage cheese cluster into the melted chocolate, ensuring it's fully coated. Place the chocolate-dipped clusters back onto the parchment-lined baking sheet. Allow the chocolate to set and harden in the fridge or freezer before serving.
