- 8 oz cream cheese, softened
- 3 tbsp low carb confectioner's sweetener e.g., Swerve
- 2 tbsp coconut oil
- 1/2 cup unsweetened flaked coconut divided
- Orange and green gel food coloring
- 2 edible candy eyes optional
In a stand mixer, beat the cream cheese, sweetener, and coconut oil until smooth.
Transfer the mixture to a bowl and refrigerate for 2 hours, or until firm.
While that chills, split the flaked coconut into two small bowls. Add a few drops of green food coloring to one bowl and orange to the other. Stir each well until the coconut is evenly tinted.
Once the cream cheese mixture is firm, shape it into 16 small balls. Roll 8 of them in the green coconut and the other 8 in the orange coconut.
Keep the monster bites in the fridge until you're ready to serve. If using, press two edible candy eyes onto one bite right before serving for a spooky touch.
