Ingredients
  

  • 8 oz cream cheese, softened
  • 3 tbsp low carb confectioner's sweetener e.g., Swerve
  • 2 tbsp coconut oil
  • 1/2 cup unsweetened flaked coconut divided
  • Orange and green gel food coloring
  • 2 edible candy eyes optional

Instructions
 

  • In a stand mixer, beat the cream cheese, sweetener, and coconut oil until smooth.
  • Transfer the mixture to a bowl and refrigerate for 2 hours, or until firm.
  • While that chills, split the flaked coconut into two small bowls. Add a few drops of green food coloring to one bowl and orange to the other. Stir each well until the coconut is evenly tinted.
  • Once the cream cheese mixture is firm, shape it into 16 small balls. Roll 8 of them in the green coconut and the other 8 in the orange coconut.
  • Keep the monster bites in the fridge until you're ready to serve. If using, press two edible candy eyes onto one bite right before serving for a spooky touch.
