These delicious low-carb pastrami and cream cheese roll-ups are quick to make and perfect for a keto-friendly lunch or snack. Crispy mozzarella forms the base, filled with a savory blend of pastrami, cream cheese, and fresh dill.

Ingredients
  

  • 1 1/2 cups shredded mozzarella cheese
  • 6 oz cream cheese softened
  • 5 oz pastrami chopped
  • 2 tsp ranch seasoning
  • 1 tbsp fresh dill chopped

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Spoon the shredded mozzarella into 6 equal circles on the parchment, leaving space between them.
  • Bake for 6–8 minutes, until the edges are golden and crispy.
  • While the cheese bakes, mix the cream cheese, pastrami, ranch seasoning, and fresh dill in a bowl until well combined.
  • Take the tray out of the oven and let the cheese circles cool for 2 minutes — they should still be pliable.
  • Place a spoonful of the filling down the center of each cheese circle.
  • Gently roll the cheese over the filling to form a neat roll-up.
  • Let them cool completely on the tray — they’ll firm up as they cool. Serve and enjoy!
