Instructions
Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil or cooking spray.
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing for 2-3 minutes until fragrant. Add ground beef, cooking until browned and fully cooked, draining excess fat if necessary.
Mix in taco seasoning and 1/4 cup water, letting it simmer for 2-3 minutes until well combined.
Spread the beef mixture evenly in the bottom of the prepared baking dish.
Spoon sour cream over the beef layer and spread it gently. Top with diced tomatoes, bell peppers, black olives (if using), and green onions.
Sprinkle shredded cheddar cheese evenly over the casserole.
Bake for 15-20 minutes or until the cheese is melted and bubbly.
Remove from the oven, garnish with fresh cilantro if desired, and serve hot.
