Lunchbox Savory Onion Chicken

Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs cut into bite-sized pieces
  • 0.25 cup all-purpose flour divided
  • 2 tbsp olive oil
  • 1 envelope onion soup mix
  • 12 ounces beer or non-alcoholic beer

Instructions
 

  • Place 2 tablespoons of flour in a shallow bowl. Add the chicken pieces and toss to coat lightly.
  • In a large skillet, heat the oil over medium heat. Brown the chicken on all sides, then remove it from the pan and set aside.
  • Add the onion soup mix and the remaining flour to the skillet. Stir to scrape up any browned bits from the bottom. Slowly whisk in the beer.
  • Bring the sauce to a boil, then cook and stir for 2 minutes until it thickens.
  • Return the chicken to the skillet. Bring to a boil, then reduce the heat, cover, and simmer for 12-15 minutes, until the chicken is cooked through.
  • Let cool completely before packing into lunch boxes. Serve cold or reheat in the morning.
