all-purpose flour

onion soup mix

beer or non-alcoholic beer
Instructions
Place 2 tablespoons of flour in a shallow bowl. Add the chicken pieces and toss to coat lightly.
In a large skillet, heat the oil over medium heat. Brown the chicken on all sides, then remove it from the pan and set aside.
Add the onion soup mix and the remaining flour to the skillet. Stir to scrape up any browned bits from the bottom. Slowly whisk in the beer.
Bring the sauce to a boil, then cook and stir for 2 minutes until it thickens.
Return the chicken to the skillet. Bring to a boil, then reduce the heat, cover, and simmer for 12-15 minutes, until the chicken is cooked through.
Let cool completely before packing into lunch boxes. Serve cold or reheat in the morning.
