Ingredients
  

  • 1.5 pounds jumbo shrimp (peeled and deveined)
  • 1 small zucchini (cut into half moons)
  • 1 cup cherry tomatoes
  • 12 ounce jar artichoke hearts (halved)
  • 0.33 red onion (sliced)
  • 0.33 cup Kalamata olives
  • 0.25 cup feta cheese (crumbled)
  • 2.5 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic salt
  • 0.25 teaspoon ground black pepper

Instructions
 

  • Preheat & Prep: Start by preheating your oven to a nice hot 425°F (220°C).
  • Combine Everything: In a large mixing bowl, gently toss together the peeled shrimp, zucchini half-moons, sliced red onion, halved artichoke hearts, sweet cherry tomatoes, and flavorful Kalamata olives.
  • Season Up: Drizzle the olive oil over the mixture. Then, sprinkle on the garlic salt, smoked paprika, black pepper, and dried oregano.
  • Mix Well: Give everything a good, gentle mix until all the ingredients are beautifully coated with the olive oil and aromatic spices.
  • Spread on Pan: Lightly brush a large baking sheet with a little olive oil to prevent sticking. Evenly spread your seasoned shrimp and veggie mix onto the prepared pan.
  • First Bake: Pop the baking sheet into the oven on the upper third rack and bake for 8 minutes.
  • Final Roast: Increase the oven temperature to 450°F (230°C) and continue roasting for another 3-5 minutes, or until the shrimp are pink and cooked through, and the vegetables are tender-crisp.
  • Serve & Enjoy: Once out of the oven, crumble the fresh feta cheese over the top for a perfect finish. Serve immediately and enjoy your healthy, flavorful meal!
