Ingredients
  

  • 1 cup Mayonnaise use your favorite brand for a creamy base
  • 0.75 cup Sour Cream or for a lighter twist, use full-fat Greek yogurt!
  • 1 ounce packet Taco Seasoning Mix
  • 45 ounces Southwest Corn (3 15-ounce cans) with poblano and red peppers, thoroughly drained to avoid a watery dip
  • 4 ounce can Chopped Mild Green Chiles drained
  • 0.5 cup Sliced Green Onions plus a little extra for a fresh garnish
  • 2 tablespoons Minced Fresh Jalapeño from 1 large pepper, remember to remove seeds and membrane for a milder kick!
  • 2 cups Shredded Mexican Cheese Blend an 8-ounce bag, feel free to use Monterey Jack, Pepper Jack, or Cheddar

Instructions
 

  • 1. Whisk the Base: In a spacious mixing bowl, combine the mayonnaise, sour cream, and taco seasoning mix. Whisk until the mixture is completely smooth and creamy.
  • 2. Combine All Flavors: Gently fold in the well-drained southwest corn, mild green chiles, sliced green onions, minced jalapeño, and shredded Mexican cheese blend. Stir everything together until all the ingredients are evenly distributed and beautifully combined.
  • 3. Chill and Mingle Flavors: Cover the bowl tightly with plastic wrap and place it in the refrigerator. Let it chill for at least 2 hours, or even better, overnight. This resting time is key for the flavors to meld together perfectly and for the dip to reach its ideal creamy consistency.
  • 4. Serve and Enjoy: Before serving, give the dip a good stir. Transfer it to a nice serving bowl. For an extra touch of freshness and color, garnish with a sprinkle of chopped cilantro, more sliced green onions, crumbled cotija cheese, a dash of chili powder, or a squeeze of fresh lime juice!
