Ingredients
  

  • 1.5 cups shredded cooked chicken (like rotisserie chicken)
  • 1 cup shredded cheddar cheese
  • 14 small low-carb flour tortillas (street taco size)
  • 4 ounces cream cheese softened
  • 0.5 cup salsa your favorite
  • 2 tablespoons avocado oil (for frying)
  • Homemade guacamole (optional, for dipping)

Instructions
 

  • Combine the shredded chicken, salsa, and softened cream cheese in a mixing bowl. Stir until everything is well mixed.
  • Lay out a tortilla. Sprinkle some shredded cheddar cheese on one half, then add a spoonful of the chicken mixture over the cheese.
  • Starting from the cheese and chicken side, tightly roll the tortilla like a small cigar. Repeat this for all 14 tortillas.
  • Heat a large skillet over medium heat and add the avocado oil. Carefully place the rolled taquitos seam-side down in the skillet. You might need to cook them in two batches.
  • Fry the taquitos, turning occasionally, until they are golden brown and crispy on all sides.
  • Serve your crispy taquitos immediately with guacamole on the side, if desired.
