- 1.5 cups shredded cooked chicken (like rotisserie chicken)
- 1 cup shredded cheddar cheese
- 14 small low-carb flour tortillas (street taco size)
- 4 ounces cream cheese softened
- 0.5 cup salsa your favorite
- 2 tablespoons avocado oil (for frying)
- Homemade guacamole (optional, for dipping)
Combine the shredded chicken, salsa, and softened cream cheese in a mixing bowl. Stir until everything is well mixed.
Lay out a tortilla. Sprinkle some shredded cheddar cheese on one half, then add a spoonful of the chicken mixture over the cheese.
Starting from the cheese and chicken side, tightly roll the tortilla like a small cigar. Repeat this for all 14 tortillas.
Heat a large skillet over medium heat and add the avocado oil. Carefully place the rolled taquitos seam-side down in the skillet. You might need to cook them in two batches.
