Instructions
Heat oven to 325°F. Line a baking sheet with parchment or a silicone mat.
In a bowl, whisk together flour, cocoa powder, baking soda, cornstarch, and salt.
In a stand mixer, beat the melted butter, granulated sugar, and brown sugar until fluffy (about 2 minutes).
Add eggs, vanilla, and mint extract. Mix until smooth.
Slowly add the dry ingredients, mixing just until combined. Don’t overmix.
Gently fold in the dark chocolate chips and mint chocolate chunks.
Cover the dough with plastic wrap and chill in the fridge for at least 30 minutes.
Shape rough dough balls (approx 50-60g). Press candy eyes and green pearls gently onto the top of each dough ball.
Freeze the dough balls for 10 minutes to stop spreading. Bake for 12–14 minutes.
