Ingredients
  

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup black cocoa powder
  • 1 tsp baking soda
  • 1 1/2 tsp cornstarch
  • 1/2 tsp salt

Wet Ingredients

  • 12 tbsp unsalted butter melted & cooled
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 large eggs room temp
  • 2 tsp vanilla extract
  • 1/4 tsp mint extract optional

Mix-ins & Toppings

  • 3/4 cup dark chocolate chips
  • 1/2 cup mint chocolate chunks
  • candy monster eyes
  • green candy pearls

Instructions
 

  • Heat oven to 325°F. Line a baking sheet with parchment or a silicone mat.
  • In a bowl, whisk together flour, cocoa powder, baking soda, cornstarch, and salt.
  • In a stand mixer, beat the melted butter, granulated sugar, and brown sugar until fluffy (about 2 minutes).
  • Add eggs, vanilla, and mint extract. Mix until smooth.
  • Slowly add the dry ingredients, mixing just until combined. Don’t overmix.
  • Gently fold in the dark chocolate chips and mint chocolate chunks.
  • Cover the dough with plastic wrap and chill in the fridge for at least 30 minutes.
  • Shape rough dough balls (approx 50-60g). Press candy eyes and green pearls gently onto the top of each dough ball.
  • Freeze the dough balls for 10 minutes to stop spreading. Bake for 12–14 minutes.
