Ingredients
  

  • 1/4 cup granulated sugar
  • 1 Tablespoon sugar-free instant pistachio pudding mix
  • 3 large egg yolks
  • 1 Tablespoon light corn syrup
  • 1 cup heavy cream
  • 2/3 cup whole milk
  • 1/4 teaspoon almond extract
  • 3-5 drops green food coloring (optional, for a brighter hue)

Instructions
 

  • Prepare the Base: In a small to medium saucepan (off the heat), whisk together the granulated sugar and the dry pistachio pudding mix. Next, add the egg yolks and corn syrup, whisking them into the sugar mixture until well combined.
  • Add Liquids & Flavor: Gently whisk in the heavy cream, whole milk, almond extract, and your optional green food coloring. Ensure everything is smoothly blended.
  • Heat for Creaminess: Place the saucepan on your stove over medium heat. Whisk slowly and constantly until the mixture reaches a temperature between 165-175°F. Using a candy thermometer helps keep track. Avoid letting it boil; we want a luscious, custard-like base.
  • Strain & Cool: Remove the pan from the heat. Place a fine-mesh sieve over your Ninja Creami pint container and carefully pour the mixture through it. This step ensures an extra-smooth gelato by catching any tiny cooked egg bits. Don't fill past the max line.
  • Chill Thoroughly: To cool the base quickly, place the pint container into a larger bowl filled with ice and cold water (an ice bath). Make sure no water gets into the gelato mixture. Once cooled, remove the pint from the ice bath, dry its exterior, and secure the lid.
  • Freeze Solid: Transfer the lidded pint to a level surface in your freezer and freeze for at least 24 hours. A completely frozen base is essential for the best Ninja Creami results.
  • Spin to Perfection: When ready, take the pint out of the freezer and remove the lid. Place the pint into the Ninja Creami's outer bowl, lock the outer bowl lid, and secure the assembly onto your machine. Press the "Gelato" button and let the cycle complete.
  • Achieve Ultimate Creaminess: If your gelato looks a little crumbly after the first spin, simply use the "Re-spin" button. For an even silkier texture, or if it's still crumbly after the re-spin, add one tablespoon of milk and re-spin one more time. Enjoy your perfectly creamy, homemade gelato!
