No-Bake Chocolate Peanut Butter Oat Bars

Ingredients
  

Bar Base

  • 1.5 cups rolled oats
  • 1/3 cup raisins
  • 3/4 cup unsalted almonds
  • 1/4 cup unsweetened shredded coconut
  • 1/4 tsp salt
  • 1/2 cup creamy peanut butter
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract

Chocolate Glaze

  • 1/4 cup cocoa powder
  • 1/4 cup honey
  • 2 tbsp coconut oil melted
  • 0.5 tsp vanilla extract

Instructions
 

  • Line an 8x8 inch square pan with parchment paper, leaving extra paper hanging over the edges for easy lifting.
  • In a food processor, combine oats, almonds, raisins, and salt. Process until the mixture is finely ground and well mixed.
  • In a small saucepan over low heat, melt peanut butter, maple syrup, and coconut oil together. Remove from heat, then stir in vanilla.
  • Pour the warm peanut butter mixture into the food processor with the oat mixture. Process until everything sticks together and forms a dough.
  • Press the mixture firmly into the prepared pan using the back of a wet spoon to smooth the top.
  • For the glaze, whisk cocoa powder, honey, melted coconut oil, and vanilla in a small bowl until smooth and shiny.
  • Spread the chocolate glaze evenly over the pressed oat layer.
  • Refrigerate for at least 2 hours until firm, then lift out and cut into 20 bars. Store leftovers in the fridge.
