- 2 tablespoons unsalted butter
- 1/2 small onion finely chopped
- 2 cloves garlic minced
- 1/4 cup vodka
- 1/4 cup tomato paste
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup uncooked orzo pasta
- 2 cups cooked rotisserie chicken shredded
- 1/2 cup freshly grated Parmesan cheese
- 1 handful fresh basil torn
- Salt and freshly ground black pepper to taste
Start by heating olive oil and butter in a large pot or Dutch oven over medium-high heat. Add the finely chopped onion and cook for about 5 minutes until it softens and turns golden.
Stir in the minced garlic and cook for just 30 seconds until fragrant.
Carefully pour in the vodka and let it simmer for 30 seconds, allowing the alcohol to cook off.
Stir in the tomato paste until it's well combined with the onion and garlic mixture.
Pour in the chicken broth, heavy cream, and add the orzo pasta. Stir everything thoroughly to ensure the tomato paste is fully dissolved. Bring the mixture to a boil over high heat, then reduce heat to a constant simmer (medium to medium-low). Cook uncovered for about 10 minutes, stirring frequently to prevent sticking, until the orzo is nearly tender and the sauce begins to thicken.
Add the shredded cooked chicken to the pot and stir, letting it warm through for about a minute.
Remove the pot from the heat. Stir in the freshly grated Parmesan cheese and torn fresh basil. Cover the pot for 3-5 minutes to allow the sauce to thicken to your desired consistency. Season with salt and freshly ground black pepper to taste, then serve immediately.
