Ingredients
  

  • 2 large Eggs
  • 1 cup Almond Flour 96g
  • 1/4 cup Organic Pumpkin 60ml
  • 3 tbsp Maple Syrup 45ml
  • 1 tsp Baking Powder 5g
  • 1 tsp Vanilla Extract 5ml
  • 1 tsp Cinnamon 2.6g
  • 1/2 tsp Pumpkin Pie Spice 1.3g
  • 1/2 tbsp Coconut Butter 7g
  • 1/2 tbsp Maple Syrup (Icing) 7ml
  • 1/2 tbsp Unsweetened Almond Milk 7ml

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk the eggs until smooth.
  • Add almond flour, pumpkin, maple syrup, baking powder, vanilla, cinnamon, and pumpkin pie spice. Blend thoroughly until well combined using a blender or immersion blender.
  • Spray a donut pan with nonstick spray. Pour the batter into the pan, filling each about three-quarters full.
  • Bake for 20-22 minutes until golden and cooked through.
  • While donuts bake, prepare the icing: combine coconut butter, maple syrup, and almond milk in a microwave-safe bowl. Microwave for 30 seconds, stir, and repeat in 15-second intervals until smooth.
  • Once donuts are baked, let them cool slightly before icing. Dip each donut into the icing mixture or drizzle on top. Enjoy immediately or refrigerate to set the icing.
