Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a big bowl, combine all the cookie ingredients until you have a thick dough.
Press the dough into a large circle on your prepared baking sheet. Bake for 10-15 minutes until lightly golden. Let cool completely.
While the cookie cools, beat together the cream cheese, butter, powdered sweetener, and vanilla extract in a medium bowl until smooth and creamy. You can use a blender for extra ease.
Once the cookie base is cool, spread the icing evenly over it.
Artfully arrange sliced strawberries and blueberries on top to create a patriotic design.
Cut into 16 squares and serve. Store leftovers covered in the refrigerator for up to 3 days.
