Ingredients
  

Cookie Base

  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 1/3 cup powdered Erythritol or Swerve
  • 1/2 cup unsalted butter softened
  • 1/4 tsp baking powder
  • 2 tsp sugar-free vanilla extract
  • 1 egg large

Icing

  • 1/4 cup cream cheese full-fat, softened
  • 2 tbsp unsalted butter softened
  • 1/4 cup powdered Erythritol or Swerve
  • 1 tsp sugar-free vanilla extract
  • 1/2 cup heavy whipping cream

Toppings

  • 1 cup strawberries sliced
  • 2/3 cup blueberries

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  • In a big bowl, combine all the cookie ingredients until you have a thick dough.
  • Press the dough into a large circle on your prepared baking sheet. Bake for 10-15 minutes until lightly golden. Let cool completely.
  • While the cookie cools, beat together the cream cheese, butter, powdered sweetener, and vanilla extract in a medium bowl until smooth and creamy. You can use a blender for extra ease.
  • Once the cookie base is cool, spread the icing evenly over it.
  • Artfully arrange sliced strawberries and blueberries on top to create a patriotic design.
  • Cut into 16 squares and serve. Store leftovers covered in the refrigerator for up to 3 days.
