  • 1 tbsp avocado oil (for pistachios)
  • 1/4 cup shelled pistachios
  • 2 tbsp avocado oil (for sauce)
  • 1 tbsp minced ginger
  • 1 clove garlic, minced
  • 1 can (15 oz) sugar-free tomato sauce
  • 3/4 cup water
  • 1/2 tsp crushed red pepper flakes to taste
  • 1 tsp garam masala or curry powder
  • 1 tsp sea salt
  • 1/2 tsp paprika

Meat Mixture

  • 2 tbsp avocado oil (for meat)
  • 1 tsp cumin seeds
  • 1/3 cup white onion, finely diced
  • 1 lb ground turkey, beef, or pork
  • 1/2 tsp crushed red pepper flakes (meat)
  • 1/4 cup full-fat coconut milk
  • 1 tsp apple cider vinegar
  • 1/4 cup fresh cilantro, chopped

Instructions
 

  • Toast pistachios in avocado oil over medium-low heat until golden, then set aside.
  • Sauté ginger and garlic, then add tomato sauce, water, spices, and simmer.
  • Cook onion with cumin seeds, then brown ground meat until fully cooked.
  • Combine meat with sauce and simmer until thickened.
  • Finish with coconut milk, apple cider vinegar, pistachios, and cilantro.
  • Serve warm on low-carb buns and enjoy.
