Ingredients
  

  • 1 1/2 cups granulated sugar divided, per color
  • 3/4 cup natural unsweetened applesauce per color
  • 3 ounces flavored JELLO 1 package, like Cherry or Berry Blue, per color
  • 1/4 ounce unflavored gelatin 1 envelope, per color
  • 1/2 teaspoon lemon juice bottled, per color

Instructions
 

  • Start by preparing your 8-inch square baking dish: lightly coat it with cooking spray. For quicker setting, chill a metal pan beforehand.
  • In a medium saucepan, combine 1 cup of the granulated sugar, applesauce, flavored JELLO, unflavored gelatin, and lemon juice. Let this mixture rest for just 1 minute.
  • Place the saucepan over medium heat and bring the mixture to a boil, stirring continuously to prevent sticking.
  • Once boiling, continue to cook and stir for exactly 1 minute. Immediately pour this vibrant mixture into your prepared baking dish.
  • Carefully transfer the dish to the refrigerator and chill for at least 3 hours, or even better, overnight, until it's perfectly firm.
  • When ready to cut, dust a clean cutting board generously with some granulated sugar.
  • Gently loosen the edges of the set gelatin from the pan with a spatula, then invert it onto your sugar-dusted cutting board.
  • Grab your favorite small, sharp cookie cutters (stars are perfect for the 4th of July!) and cut out your gumdrop shapes. Dust the cutters with sugar to prevent sticking.
  • Sprinkle more sugar onto a sheet of wax or parchment paper. Arrange your freshly cut gumdrops on top and let them dry for about 8 hours, or until they feel slightly sticky but firm. This step is key for that classic gumdrop texture!
  • Finally, roll each gumdrop in the remaining granulated sugar for a beautiful, sparkly finish. Store these delightful homemade treats in an airtight container at room temperature for up to one week.
