Peanut Butter Dream Frosting

A wonderfully light and fluffy peanut butter frosting, perfect for cupcakes or a two-layer cake. Quick to make and irresistibly delicious!

Ingredients
  

  • 1 cup unsalted butter (2 sticks), softened to room temperature
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1/8 tsp fine sea salt
  • 2 1/2 cups powdered sugar sifted

Instructions
 

  • In the bowl of an electric mixer fitted with the paddle attachment (or using a hand mixer), combine the softened butter and creamy peanut butter. Beat them together on medium-high speed until the mixture looks wonderfully light and fluffy, making sure to scrape down the sides and bottom of the bowl occasionally so everything gets mixed evenly.
  • Add the vanilla extract, a pinch of fine sea salt, and the sifted powdered sugar. Continue beating for about 3 more minutes until your frosting is delightfully smooth and perfectly fluffy.

Notes

This recipe yields approximately 3 cups of frosting, enough for 24 cupcakes or 1 two-layer cake.
To store any leftover frosting, simply transfer it to an airtight container and keep it in the fridge for up to a week, or in the freezer for up to three months. When you're ready to use it again, just let it come to room temperature and re-whip it in your stand mixer until it's light and fluffy once more. If it seems a little thin, you can add a tablespoon or two of powdered sugar to thicken it up.
