Peanut Butter Dream Frosting

- 1 cup unsalted butter (2 sticks), softened to room temperature
- 1 cup creamy peanut butter
- 1 tsp vanilla extract
- 1/8 tsp fine sea salt
- 2 1/2 cups powdered sugar sifted
In the bowl of an electric mixer fitted with the paddle attachment (or using a hand mixer), combine the softened butter and creamy peanut butter. Beat them together on medium-high speed until the mixture looks wonderfully light and fluffy, making sure to scrape down the sides and bottom of the bowl occasionally so everything gets mixed evenly.
Add the vanilla extract, a pinch of fine sea salt, and the sifted powdered sugar. Continue beating for about 3 more minutes until your frosting is delightfully smooth and perfectly fluffy.
This recipe yields approximately 3 cups of frosting, enough for 24 cupcakes or 1 two-layer cake.
To store any leftover frosting, simply transfer it to an airtight container and keep it in the fridge for up to a week, or in the freezer for up to three months. When you're ready to use it again, just let it come to room temperature and re-whip it in your stand mixer until it's light and fluffy once more. If it seems a little thin, you can add a tablespoon or two of powdered sugar to thicken it up.
