Instructions
In a large mixing bowl, use a hand mixer to beat the heavy cream until it becomes light and fluffy with soft peaks. Scoop out about a quarter of this whipped cream and set it aside for garnishing later.
In a separate, smaller bowl, combine the creamy peanut butter and softened mascarpone cheese. Stir them together until the mixture is smooth and fully blended. Next, mix in your powdered sweetener until it's completely incorporated.
Carefully add the peanut butter mixture to the bowl containing the majority of the whipped cream. Using a spatula, gently fold the two together. Be careful not to stir too vigorously, as this helps keep the mousse airy and light.
Spoon the fluffy peanut butter mousse into individual serving dishes. Top each portion with a dollop of the whipped cream you reserved earlier. For extra flair and crunch, consider adding some chopped nuts or a sprinkle of sugar-free chocolate shavings!
