Ingredients

  • 1/2 cup butter melted
  • 2 ⅓ cups graham cracker crumbs about 18 long rectangular crackers
  • 1 3/4 cups peanut butter divided
  • 2 cups powdered sugar confectioners' sugar
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  • Start by lining an 8x8 inch square pan with parchment paper.
  • In a microwave-safe bowl, melt the butter for about 1 minute and set aside.
  • Place the graham crackers in a large zip-top bag and crush them into fine crumbs using a rolling pin.
  • In a large mixing bowl, combine 1 ½ cups of peanut butter with the melted butter, stirring until well mixed.
  • Gradually add 1 cup of powdered sugar, mixing until combined, then add the second cup and mix again.
  • Fold in the graham cracker crumbs until the mixture is thick and moldable.
  • Press the mixture evenly into the bottom of the lined pan, using a second piece of parchment paper to smooth it out.
  • In another bowl, combine the chocolate chips and ¼ cup of peanut butter, microwaving at half power and stirring every 30 seconds until smooth, about 3 minutes.
  • Pour the chocolate mixture over the peanut butter layer and spread it evenly.
  • Refrigerate for 1.5 hours to chill.
  • Once set, lift the bars out using the parchment paper, score the top into squares, and cut along the lines.
  • Serve cold and enjoy!
