Ingredients
  

  • 1/4 cup coconut flour
  • 1 teaspoon all-purpose seasoning
  • 2 large eggs
  • 4 ounces roasted salted pecans finely chopped
  • 8 ounces chicken tenders

Instructions
 

  • Kick things off by preheating your oven to 400°F (200°C). Grab a baking sheet and line it with parchment paper for easy cleanup.
  • Set up your dredging station: In one shallow bowl, combine the coconut flour and all-purpose seasoning. Whisk the eggs in a second shallow bowl. Place the finely chopped pecans in a third shallow bowl.
  • Take one chicken tender and first dredge it in the coconut flour mixture, shaking off any excess. Next, dip it into the beaten egg, ensuring it's fully coated. Finally, press it firmly into the chopped pecans until it's nicely covered.
  • Carefully place each coated chicken tender onto your prepared baking sheet, leaving a little space between them.
  • Pop the baking sheet into the preheated oven and bake for 20-25 minutes. Smaller tenders might be ready in just 15 minutes. You'll know they're perfectly cooked when they're golden brown and the chicken is thoroughly cooked through.
  • Serve these delicious tenders warm, perhaps with a side of your favorite keto-friendly ketchup or BBQ sauce for dipping.
