  • 1.5 pounds boneless, skinless chicken thighs
  • 0.75 cup almond flour
  • 3 large eggs
  • 1 tablespoon Dijon mustard
  • 2 cups finely chopped pecans
  • salt to taste
  • black pepper to taste

  • Get Ready to Bake! Preheat your oven to 400°F (200°C). Lightly spray a wire rack and a rimmed baking sheet with cooking spray (or line with parchment paper for effortless cleanup). Place the rack on the baking sheet.
  • Set Up Your Coating Station. Grab three shallow bowls. Pour the almond flour into the first bowl. In the second bowl, whisk together the eggs and Dijon mustard until well combined. Spread the finely chopped pecans in the third bowl.
  • Season the Chicken. Gently season both sides of each chicken thigh with salt and pepper. This ensures every bite is flavorful!
  • Coat the Chicken. Take one chicken thigh at a time. First, dip it completely in the almond flour, tapping off any extra. Next, dip it into the egg mixture, letting any excess drip away. Finally, press it firmly into the chopped pecans to create a beautiful, even crust. Place the coated chicken on your prepared baking rack. Repeat this easy process for all remaining chicken thighs.
  • Bake to Perfection. Bake for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) using a meat thermometer. Serve your crispy, flavorful chicken with your favorite healthy dipping sauce!
