Ingredients
  

  • 0.5 cup non-dairy milk oat, almond, or pistachio milk
  • 1 tbsp creamy pistachio butter
  • 1 tbsp pure maple syrup
  • 0.5 tsp vanilla extract
  • 0.5 cup quick-cooking oats
  • 1 tsp chia seeds
  • 0.25 tsp matcha powder optional

Toppings (optional)

  • vegan yogurt
  • chopped pistachios
  • fresh raspberries

Instructions
 

  • In a small jar or bowl, gather your quick oats, chia seeds, non-dairy milk, pistachio butter, maple syrup, vanilla, and matcha powder if you're using it.
  • Whisk the ingredients together thoroughly, making sure the pistachio butter is fully blended in and no dry clumps remain.
  • Cover your container and place it in the refrigerator overnight, or for a minimum of 4 hours, to let the oats soften into a luscious, pudding-like treat.
  • The next morning, give your oats a good stir (feel free to pour in a tiny splash of milk if you like a thinner texture). Top with spoonfuls of vegan yogurt, crunchy chopped pistachios, and fresh raspberries, then dig in!
