Instructions
Start by preheating your mini waffle maker.
In a small bowl, beat the egg until fluffy.
Mix in the mozzarella cheese, pumpkin pie spice, and pumpkin until well combined.
Pour half of the mixture into the mini waffle maker and cook for about 3 to 4 minutes until golden brown.
While the chaffle cooks, combine all cream cheese frosting ingredients in a bowl and mix until smooth.
Spread the frosting on the hot chaffle and enjoy immediately.
