Ingredients
  

  • 1 egg
  • 1/2 cup mozzarella cheese
  • 1/2 tsp pumpkin pie spice
  • 1 tbsp pumpkin (solid packed, no sugar added)

Optional Cream Cheese Frosting Ingredients

  • 2 tbsp cream cheese (softened, room temperature)
  • 2 tbsp monkfruit confectioners blend (or any keto-friendly sweetener)
  • 1/2 tsp clear vanilla extract

Instructions
 

  • Start by preheating your mini waffle maker.
  • In a small bowl, beat the egg until fluffy.
  • Mix in the mozzarella cheese, pumpkin pie spice, and pumpkin until well combined.
  • Pour half of the mixture into the mini waffle maker and cook for about 3 to 4 minutes until golden brown.
  • While the chaffle cooks, combine all cream cheese frosting ingredients in a bowl and mix until smooth.
  • Spread the frosting on the hot chaffle and enjoy immediately.
