Ingredients
  

Zucchini Fries

  • 3 medium zucchini squash cut into 1/4-inch matchsticks
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1/2 cup Parmesan cheese freshly grated
  • 3/4 cup Panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dry parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper to taste

Dipping Sauce

  • 1/2 cup low-fat sour cream
  • 1/4 tsp ground mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp dry dill

Instructions
 

  • Preheat your oven to 425°F. Line a baking sheet with foil and mist with cooking spray.
  • Slice zucchini into 1/4-inch matchsticks.
  • In a shallow dish, combine Panko, Parmesan, parsley, garlic powder, onion powder, salt, and pepper.
  • Place beaten eggs in a separate dish.
  • Toss zucchini in a zip-top bag with flour to coat, then dip in eggs and roll in the Panko-Parmesan mixture.
  • Arrange in a single layer and bake for 20 minutes until golden and crispy.
  • Whisk together sauce ingredients in a small bowl and serve.
