Quick & Easy Instant Pot Cauliflower

Ingredients
  

  • 1 head cauliflower cut into medium florets (about 1.5-2 inches)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice fresh or bottled
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups water
  • 1 tablespoon fresh parsley chopped (optional, for garnish)

Instructions
 

  • Prepare Cauliflower: In a large bowl, combine the cauliflower florets with olive oil, lemon juice, paprika, garlic powder, salt, and pepper. Toss gently until all the florets are evenly coated.
  • Set Up Instant Pot: Pour the water into your Instant Pot. Insert a steamer basket into the pot, then carefully place the seasoned cauliflower florets inside the basket.
  • Pressure Cook: Secure the Instant Pot lid and make sure the valve is set to 'Sealing'. Select the 'Pressure Cook' (or 'Manual') setting and set the time to 0 (zero) minutes on high pressure. Don't worry, the cauliflower will cook perfectly as the pot comes to pressure, which typically takes about 10-12 minutes.
  • Release Pressure: Once the cooking cycle finishes (the pot will beep), immediately perform a quick release. Carefully turn the valve to 'Venting' to release the steam. Wait until all the steam has escaped and the float valve drops before opening the lid.
  • Serve & Garnish: Carefully remove the steamer basket. Transfer the tender cauliflower to a serving dish. If desired, sprinkle with fresh chopped parsley for a pop of color and freshness. Serve warm and enjoy!
