In a large pan, brown the lean ground beef until it's fully cooked and no longer pink. Make sure to drain any excess fat thoroughly for a healthier meal.
Stir in the taco seasoning packet and the water with the cooked beef. Let it simmer gently for about 5 minutes until the sauce thickens nicely. Set it aside to cool slightly.
Grab a spacious bowl. Combine the fresh chopped lettuce, colorful red and green bell peppers, sliced black olives, rinsed pinto beans, diced tomatoes, and sliced green onions.
Sprinkle the shredded cheddar cheese over the salad greens. Then, spoon the seasoned and slightly cooled ground beef mixture on top.
Lightly crush the Doritos and scatter them over the salad. Drizzle generously with Catalina dressing.
Toss everything together gently to ensure all ingredients are coated with the dressing. Garnish with a dollop of sour cream and extra green onions if you like. Serve immediately to enjoy the ultimate fresh crunch!
