Ingredients
  

  • 0.5 cup softened salted butter
  • 0.5 cup light brown sugar
  • 0.5 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 large egg
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1.5 cups all-purpose flour
  • 2 cups Fruity Pebbles cereal divided for dough and topping

Instructions
 

  • Start by creaming together the softened butter, brown sugar, and granulated sugar in a mixing bowl until light and fluffy, about 2 minutes.
  • Mix in the vanilla extract and the egg until just combined, scraping the bowl's sides as you go.
  • Gradually add the flour, baking powder, and baking soda to the wet ingredients, mixing on low speed until the dough just comes together.
  • Gently fold in 1 1/2 cups of Fruity Pebbles cereal. Cover the dough and chill it in the refrigerator for 30 minutes.
  • While the dough chills, preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a silicone mat.
  • Once chilled, scoop the dough into 12 equal balls. Roll them smooth, then gently flatten each into a disc. Dip the top of each cookie into the remaining 1/2 cup of Fruity Pebbles for extra color and crunch.
  • Place the cookies about 1 1/2 inches apart on your prepared baking sheet.
  • Bake for about 10 minutes until the edges are lightly golden.
  • Let them cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely. Enjoy your vibrant, homemade treats!
