Instructions
Start by creaming together the softened butter, brown sugar, and granulated sugar in a mixing bowl until light and fluffy, about 2 minutes.
Mix in the vanilla extract and the egg until just combined, scraping the bowl's sides as you go.
Gradually add the flour, baking powder, and baking soda to the wet ingredients, mixing on low speed until the dough just comes together.
Gently fold in 1 1/2 cups of Fruity Pebbles cereal. Cover the dough and chill it in the refrigerator for 30 minutes.
While the dough chills, preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a silicone mat.
