Ingredients
  

Crust

  • 6 homemade keto chocolate wafers

Filling

  • 6 ounces cream cheese softened for easy mixing
  • 1/2 cup powdered low-carb sweetener like Swerve
  • 3 tablespoons heavy whipping cream at room temperature
  • 3/4 teaspoon refreshing peppermint extract
  • 1/2 teaspoon pure vanilla extract
  • natural green food coloring optional, for that classic mint look!
  • 4 chopped keto thin mints for an extra chocolatey crunch

Chocolate Topping

  • 1/4 cup heavy cream
  • 1.25 ounces finely chopped sugar-free dark chocolate

Instructions
 

  • Crust
    First, prepare a muffin pan with 6 parchment liners. Gently press one keto chocolate wafer into the bottom of each liner to form the crust.
  • Filling
    In a spacious bowl, whip the softened cream cheese until it's super smooth.
  • Mix in the powdered sweetener until fully blended, then add the heavy cream and both extracts.
  • Stir in a few drops of green food coloring if you like that vibrant minty shade.
  • Gently fold in the chopped keto thin mints.
  • Spoon this creamy filling evenly over your prepared crusts, pressing it down lightly with the back of a spoon. Pop them into the freezer for about 4 hours, or until they're nicely firm.
  • Chocolate Topping
    To make the luscious topping, gently heat the heavy cream until it just starts to simmer (a small pan or microwave works great).
  • Remove from heat, add the finely chopped sugar-free dark chocolate, and let it sit for a couple of minutes to melt.
  • Whisk until you have a smooth, glossy ganache.
  • Drizzle this chocolate topping over each cheesecake. Place them back in the refrigerator for about 15 minutes to set.
  • For an extra special touch, you can garnish with a dollop of whipped cream or tiny keto thin mints!
