  • 1/2 teaspoon vanilla extract

  • 1. Craft the Crunchy Pistachio Base:

    Gently pulse ½ cup of pistachios in a food processor until they become fine crumbs.
  • In a mixing bowl, combine the almond flour, ground pistachios, granulated sweetener, and a pinch of salt.
  • Pour in the melted butter, egg yolk, vanilla extract, and a tiny drop of green food coloring if you like. Stir until a soft dough forms.
  • Press this delightful dough evenly into an 8x8 inch pan lined with parchment paper.
  • 2. Whip Up the Creamy Pistachio Filling:

    In your food processor, combine the remaining ½ cup of pistachios with the avocado oil. Pulse until it turns into a wonderfully smooth pistachio butter.
  • Add the softened cream cheese, ¼ cup at a time, blending well after each addition until everything is super smooth.
  • Stir in the Greek yogurt, then blend in the powdered sweetener and salt until fully mixed.
  • Finally, add the egg, vanilla extract, almond extract, and another tiny drop of green food coloring if desired. Blend just until smooth – don't overmix once the egg is in!
  • 3. Bake to Perfection:

    Carefully pour the pistachio filling over your crust in the pan, spreading it evenly.
  • Bake at 325°F (160°C) for approximately 22 minutes, or until the filling is set and lightly golden at the edges.
  • Let the bars cool down completely on a wire rack before moving to the next step.
  • 4. Create the Glossy Chocolate Topping:

    Gently heat the heavy cream in a small saucepan or microwave until it's hot, but not boiling.
  • Add the sugar-free chocolate chips and stir continuously until they are completely melted and form a beautifully smooth ganache.
  • 5. Assemble and Chill for Bliss:

    Pour the warm chocolate ganache evenly over the completely cooled pistachio bars.
  • Optional design: For a fancy touch, pipe thin green stripes (using a mixture of melted sugar-free white chocolate chips, a drop of green food coloring, and a tiny bit of heavy cream) across the chocolate, then drag a toothpick through them in the opposite direction for a marbled effect.
