Ingredients
  

  • 2 tablespoons unsalted butter divided
  • 3 medium eggs whisked
  • 1 cup cooked shrimp or your favorite lean protein like chicken breast or tofu
  • 2 medium carrots diced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1/2 cup frozen peas thawed
  • 4 cups cooked Jasmine rice preferably day-old and chilled for best texture
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons oyster sauce or vegetarian stir-fry sauce
  • 1 teaspoon sesame oil
  • Sliced green onions for garnish
  • Salt and black pepper to taste
  • 1 teaspoon grated ginger optional, for extra zest
  • 1 tablespoon fish sauce optional, for deeper savory flavor

Instructions
 

  • Scramble the Eggs: In a large skillet or wok, melt 1 tablespoon of butter over medium heat. Pour in your whisked eggs and gently scramble until they are fully cooked. Transfer them to a plate and set aside.
  • Sauté the Veggies: Add the remaining 1 tablespoon of butter to the same skillet. Add the diced carrots and onion, cooking for about 3-4 minutes until they begin to soften. Stir in the minced garlic and optional grated ginger, cooking for just one more minute until fragrant.
  • Add the Rice & Peas: Gently incorporate the chilled, day-old rice and thawed peas into the skillet. Stir and cook for 3-4 minutes, allowing the rice to lightly brown and warm through.
  • Combine & Season: Return the scrambled eggs and your cooked shrimp (or chosen protein) to the skillet. Drizzle in the soy sauce, oyster sauce, and sesame oil. Stir everything together for 1-2 minutes until all ingredients are well combined and heated through. For an extra layer of savory depth, add the optional fish sauce now. Season with salt and black pepper to your liking.
  • Serve & Garnish: Serve your delicious fried rice hot, garnished with fresh sliced green onions if desired. Enjoy your homemade, restaurant-quality meal!
