Return to School Lunchbox Sesame Puffed Rice Bars
A healthy, no-bake snack perfect for lunchboxes. These sesame puffed rice bars are packed with seeds and natural sweetness.

- 3/4 cup tahini
- 3/4 cup honey
- 4 cups puffed rice
- 1 1/2 cups sunflower seeds
- 1 1/2 cups pepitas (pumpkin seeds)
- 1/2 cup sesame seeds
Lightly grease a 20cm x 30cm (8x12 inch) pan. Line the bottom and sides with baking paper, letting the paper stick up about 5cm (2 inches) above the edges.
In a small saucepan over low heat, warm the tahini and honey together. Stir occasionally for about 3 minutes, until the honey melts and the mixture is smooth and combined.
In a large bowl, mix the puffed rice, sunflower seeds, pepitas, and sesame seeds. Pour the warm tahini-honey mixture over the dry ingredients. Stir quickly to coat everything evenly.
Spoon the mixture into the prepared pan. Use the back of a spoon (or a spatula) to press it down firmly and evenly – this helps the bars hold together.
Place the pan in the fridge and let it set for at least 6 hours (or overnight). Once firm, cut into 20 bars. Store in the refrigerator until ready to pack in lunchboxes.
