Equipment

  • Large Baking Sheet
  • Parchment paper (optional)

Ingredients

  • 2 medium Delicata squash (about 2 pounds each)
  • 1/4 cup Olive oil
  • 1/2 tablespoon Garlic powder (optional, but highly recommended for flavor!)
  • 3/4 teaspoon Sea salt
  • 1/4 teaspoon Black pepper

Instructions

  • First, preheat your oven to a nice and hot 425°F (218°C). Grab a large baking sheet and either line it with parchment paper for easy cleanup or use a non-stick pan, lightly brushing it with a touch of oil for the best browning results.
  • Carefully trim off both ends of each delicata squash. Slice each squash in half lengthwise, from top to bottom. Use a spoon to easily scoop out all the seeds and any stringy bits inside.
  • Place one squash half cut-side down on your cutting board. Slice it crosswise into beautiful 1-inch thick half-moon shapes. Repeat this simple step with all the remaining squash halves.
  • Spread your squash slices in a single layer on the prepared baking sheet. Make sure they have a little space between them for even cooking. Drizzle generously with olive oil, then sprinkle both sides with garlic powder (if you're using it), sea salt, and black pepper.
  • Pop the baking sheet into your preheated oven. Roast for about 25 to 30 minutes, giving the squash a gentle flip halfway through. You'll know they're ready when they're wonderfully tender and have delicious, golden-brown, caramelized edges. Enjoy this healthy and flavorful side dish!
