This easy and healthy roasted delicata squash recipe is a perfect side dish, delivering tender, caramelized half-moons with minimal effort and maximum flavor.

First, preheat your oven to a nice and hot 425°F (218°C). Grab a large baking sheet and either line it with parchment paper for easy cleanup or use a non-stick pan, lightly brushing it with a touch of oil for the best browning results.
Carefully trim off both ends of each delicata squash. Slice each squash in half lengthwise, from top to bottom. Use a spoon to easily scoop out all the seeds and any stringy bits inside.
Place one squash half cut-side down on your cutting board. Slice it crosswise into beautiful 1-inch thick half-moon shapes. Repeat this simple step with all the remaining squash halves.
Spread your squash slices in a single layer on the prepared baking sheet. Make sure they have a little space between them for even cooking. Drizzle generously with olive oil, then sprinkle both sides with garlic powder (if you're using it), sea salt, and black pepper.
