Ingredients
  

  • 1 large head garlic
  • 1.5 cups cherry tomatoes
  • 5 slices prosciutto
  • 9 tablespoons olive oil divided
  • 0.25 cup pitted Kalamata olives
  • Italian herb seasoning a small sprinkle
  • 1 tablespoon balsamic vinegar
  • 1 loaf rustic Italian bread (like a baguette)
  • 16 ounces burrata cheese (or fresh mozzarella)
  • fresh basil leaves for garnish
  • salt and freshly ground black pepper to taste

Instructions
 

  • 1. Prepare the Aromatic Topping: Preheat your oven to 375°F (190°C). Peel all the garlic cloves, trim the ends, and cut larger cloves in half. Place them in a small bowl with 3 tablespoons of olive oil, salt, and pepper. Toss gently to coat.
  • Form a foil "bowl" on a baking sheet to keep the oil contained. Spread the garlic in a single layer and roast for 20-25 minutes, or until beautifully golden brown. Keep a close eye on it after 15 minutes to prevent burning!
  • While the garlic roasts, heat 2 tablespoons of olive oil in a pan over high heat. Add the cherry tomatoes, swirling to coat. Cover with a vented lid or splatter screen and let them sear undisturbed for 7-8 minutes. You want them to get lovely charred spots and release some juice.
  • Once the garlic is roasted, remove it from the oven. Carefully drain the fragrant garlic oil into a separate bowl – you'll use this later for the bread!
  • To the pan with the tomatoes, add the roasted garlic, ¼ cup Kalamata olives, 2 more tablespoons of olive oil, 1 tablespoon of balsamic vinegar, and a small sprinkle of Italian herb seasoning. Sauté gently over medium heat for 5 minutes, being careful not to crush the tomatoes. If you prefer to serve your bruschetta cold, let this delicious topping cool down in the refrigerator for 45 minutes to an hour.
  • 2. Craft the Prosciutto Roses: Carefully separate 2 slices of prosciutto (choose a brand that uses wax paper between slices for ease). Use kitchen scissors to cut each slice into 4 smaller pieces.
  • Fold each small piece in half, then gently roll it up to create a delicate rose shape. Repeat this process until you have 8 charming prosciutto roses. Set them aside.
  • 3. Assemble Your Valentine's Treat: Preheat your oven or toaster oven to 350°F (175°C). Slice your rustic Italian bread into ½-inch thick pieces.
  • Add 2 more tablespoons of olive oil to the reserved garlic oil and pour it onto a plate. Dip each bread slice into this flavorful oil, ensuring both sides are coated.
  • Arrange the bread slices on a baking sheet and toast for 15-20 minutes, or until they're lightly golden and perfectly crispy.
  • Once toasted, arrange your bread slices. On one side of each toast, spoon a generous dollop of creamy burrata. On the other side, spoon the vibrant tomato, garlic, and olive topping, making sure every bite gets some of each ingredient.
  • Crown each bruschetta with a delicate prosciutto rose and a fresh basil leaf. Serve immediately for an unforgettable romantic appetizer!
