Preheat your oven to 350°F (175°C). While it's warming up, prepare your sweet messages! Write short, loving fortunes or wishes on small strips of paper (about 2-3 inches long). Line your cookie sheets with parchment paper or a silicone baking mat for easy cookie release.
In a large mixing bowl, combine the egg whites and sugar. Using an electric mixer on high speed, whip the mixture until it becomes light and frothy, usually taking about 2 minutes.
Gently fold in the melted and cooled butter, followed by the vanilla extract, mixing until everything is just combined.
Gradually add the all-purpose flour to the batter, mixing well until it's smooth. Next, stir in the pomegranate juice, one tablespoon at a time, until your batter has a thick yet fluid consistency. If you want an even brighter pink for Valentine's, now's the time to add a few drops of red food coloring.
Spoon approximately one tablespoon of batter onto your prepared baking sheet. Use the back of a spoon to gently spread the batter out into very thin circles, about 3-4 inches in diameter.
