  • 2 medium-sized beetroots cooked or roasted
  • 1 can chickpeas 15-ounce, rinsed and drained (reserve a few for garnish if desired)
  • 3 tablespoons tahini
  • 2 cloves garlic
  • 1 large lemon juiced (and zest for extra flavor!)
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste
  • 2 tablespoons olive oil divided (for hummus)

Garnish

  • 1 tablespoon olive oil for garnish
  • 2 tablespoons chopped cilantro
  • 1 teaspoon sesame seeds white or black

Instructions
 

  • Prepare Your Beets: First, get your beautiful beets ready! You can roast them by slicing into 1-inch chunks, tossing with 1 tablespoon of olive oil, and baking at 400°F (200°C) for 25 minutes until tender. Alternatively, for a quicker option, chop them, place in a microwave-safe bowl with a splash of water, cover, and microwave for about 5 minutes. Let them cool down before moving on. Or, simply use pre-cooked, unpickled beets from the store.
  • Blend to Perfection: In a food processor, combine your cooled beets, rinsed chickpeas, tahini, garlic cloves, fresh lemon juice, cumin, salt, and pepper. Blitz everything together until it starts to break down.
  • Achieve Creamy Dreaminess: With the food processor running, slowly drizzle in 2 tablespoons of olive oil. Continue blending until your hummus is wonderfully creamy and smooth. If you prefer an even silkier consistency, add a tablespoon or two of water and blend again.
  • Serve with Love: Spoon the vibrant pink hummus onto a serving dish or into a bowl. Use the back of a spoon to create a lovely swirl or a little well in the center for your toppings.
  • Garnish & Enjoy: Finish your beautiful hummus with a drizzle of the remaining olive oil, a sprinkle of fresh chopped cilantro, and sesame seeds for a delightful crunch.
