Ingredients
  

  • 3 cups cooked rotisserie chicken, diced
  • 1 can healthy cream of chicken soup (10.5 ounce) low-sodium recommended
  • 3 cups cooked brown or white rice
  • 1/2 cup sliced almonds optional, for crunch
  • 1/2 cup plain Greek yogurt or light mayonnaise for a creamy touch
  • 3/4 cup diced celery
  • 1/2 cup crushed corn flakes or other healthy crisp topping like whole grain crackers
  • 2 tablespoons unsalted butter, melted
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  • In the prepared baking dish, combine the diced chicken, healthy cream of chicken soup, cooked rice, sliced almonds (if using), Greek yogurt, diced celery, salt, and pepper. Stir everything together until well combined.
  • Place the corn flakes in a plastic bag and gently crush them into smaller pieces.
  • Evenly sprinkle the crushed corn flakes over the top of your casserole mixture.
  • Drizzle the melted butter evenly over the corn flakes.
  • Pop the dish into the preheated oven and bake for 30 to 40 minutes, or until the casserole is bubbly and heated through, and the topping is golden brown and crispy. Let it cool for a few minutes before serving.
