  • 1 large jalapeño chopped

  • 1/2 lime juiced
  • 1/2 tsp salt divided

For the Chicken

  • 2 lbs boneless, skinless chicken breast diced
  • 1/2 tsp cumin
  • 1 tsp paprika powder
  • 1 tbsp garlic powder
  • 1/4 tsp red chili pepper flakes
  • 1/4 tsp black pepper

For the Topping

  • 1 cup shredded mozzarella

Instructions
 

  • Get your oven ready by preheating to 400°F (200°C). Lightly grease a 9x13 inch casserole dish.
  • In a mixing bowl, gently stir together the diced cherry tomatoes, chopped onion, jalapeño, fresh cilantro, lime juice, and 1/4 teaspoon of salt. This is your vibrant salsa base!
  • Spread the diced chicken breast evenly in the prepared casserole dish. Sprinkle generously with cumin, paprika powder, garlic powder, red chili pepper flakes, and black pepper, ensuring all pieces are well-coated for maximum flavor.
  • Carefully spoon your fresh tomato mixture over the seasoned chicken. Finish by scattering the shredded mozzarella evenly on top.
  • Bake in the preheated oven, uncovered, for 25 to 30 minutes, or until the chicken is thoroughly cooked through and the cheese is bubbly and golden.
