Preheat your oven to 350°F (175°C). Line an 11x17-inch rimmed baking sheet with parchment paper, making sure some hangs over the edges for easy lifting. Lightly grease the parchment paper.
In a large skillet over medium heat, melt the butter or oil. Add the chicken sausages and cook until they're nicely browned. Remove them from the pan and slice thinly.
In a blender, combine the eggs, softened cream cheese, whipping cream, salt, pepper, and garlic powder. Blend until the mixture is completely smooth – no lumps!
Pour the smooth egg mixture evenly into your prepared baking pan, spreading it all the way to the edges. Bake for 15 to 18 minutes, or until the omelet is just set and cooked through.
As soon as you pull the omelet from the oven, immediately sprinkle 1 cup of the shredded cheddar cheese and all the sliced sausage evenly over it. Starting from one of the shorter ends, carefully roll the omelet up tightly, using the parchment paper to help you lift and guide it.
Sprinkle the remaining 1/2 cup of cheddar cheese over the rolled omelet. Pop it back into the oven for another 5 minutes, or until the cheese on top is beautifully melted. Slice your delicious omelet roll and serve warm!
