In a medium bowl, whisk the egg and milk together. Melt the butter in the microwave and mix it into the egg mixture.
In another small bowl, combine the flour, baking powder, salt, and brown sugar. Add the dry ingredients to the wet mixture and whisk until smooth, leaving some lumps is fine. Let the batter rest for about 10 minutes for fluffier pancakes, but you can skip this if you're short on time.
Preheat your griddle to 325°F (medium heat on the stove). Lightly spray the griddle or pan and place the sausage patties on it, warming them for about 2 minutes on each side. Remove the sausage and set aside.
Pour about ¼ cup of batter onto the griddle five times, spacing them out. After 1 minute, place a sausage patty in the center of each pancake and cover it with a bit less than ¼ cup of batter. Cook for another 2-3 minutes until the edges are dry and bubbly. Flip and cook for an additional 2-3 minutes.
Serve hot with butter and syrup, and enjoy!
