  • Grab a large, sturdy skillet with a lid. Cook your ground chorizo over medium-high heat, breaking it up with a spoon as it browns. This should take about 8 minutes until it's fully cooked.
  • Drain any excess fat from the chorizo for a healthier meal. Then, stir in the salsa, making sure it's well combined.
  • Now, create 6 little "nests" or wells in the chorizo-salsa mixture using your spoon or spatula. Carefully crack one egg into each well.
  • Lower the heat to medium and pop the lid on your skillet. Let it cook for about 15 minutes, or until the egg whites are firm and the yolks are just how you like them – slightly runny is delicious! (If your eggs are at room temperature, they might cook a bit faster.)
