  • 1 medium zucchini about 200 g, diced
  • 0.5 cup onion 80 g, diced
  • 0.5 cup green bell pepper 75 g, diced
  • 2 cloves garlic minced
  • 0.5 cup shredded cheddar cheese 60 g
  • 2 tbsp olive oil

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add diced onion and bell pepper; cook for 2-3 minutes until tender.
  • Incorporate ground beef; cook for 5-6 minutes until browned thoroughly.
  • Stir in minced garlic; cook for 1-2 minutes until fragrant.
  • Add diced zucchini; cook for 2-3 minutes until soft.
  • Season with salt and pepper as desired.
  • Sprinkle shredded cheddar cheese over the mixture.
  • Cover and cook for 2-3 minutes until cheese melts and bubbles.
