Ingredients
  

  • 1 savory keto pie crust ready to use
  • 1/3 pound bacon diced and cooked until crispy
  • 1/3 cup finely chopped onion
  • 6 large eggs
  • 3/4 cup heavy cream
  • 1/4 cup water
  • 1/2 teaspoon salt
  • freshly ground black pepper to taste
  • 4 ounces shredded Gruyère or Swiss cheese
  • 2 sprigs fresh thyme (or 1/4 teaspoon dried thyme)

Instructions
 

  • Prepare Your Crust: Gently press your savory keto pie crust into a 9-inch pie plate. Pop it in the fridge to chill while you get the filling ready – this helps it bake beautifully!
  • Preheat & Crisp Bacon: Set your oven to 350°F (175°C). In a skillet over medium heat, cook your diced bacon until it's perfectly golden and crispy, usually about 6 minutes. Drain on paper towels.
  • Whip Up the Custard: In a medium bowl, whisk together the eggs, heavy cream, water, salt, and pepper until light and frothy.
  • Sauté Aromatics: In the same skillet (with about a tablespoon of bacon fat remaining for flavor!), gently cook the chopped onion with the fresh thyme sprigs until the onions are soft. Remove the thyme sprigs.
  • Assemble Your Quiche: Take your chilled crust. Layer one-third of the shredded cheese, followed by one-third of the crispy bacon, and half of the softened onions. Repeat with another layer of cheese, onions, and bacon.
  • Add Custard & Top: Carefully pour the whisked egg mixture over the layers. Finish by sprinkling the remaining cheese and bacon on top.
  • Bake to Perfection: Bake for 35-40 minutes. The quiche is done when the edges are set, but the very center still has a slight wobble. Let it cool in the pan before slicing and enjoying – this helps it set even further!

Notes

Feel free to adjust the amount of cheese or bacon to your preference. This quiche is delicious served warm or at room temperature.
