Ingredients
  

  • 4 large chicken breasts (about 3 lbs total, sliced horizontally into 8 thinner cutlets)
  • 4 oz prosciutto (8 thin slices)
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • 8 cloves garlic thinly sliced
  • 1/4 teaspoon xanthan gum (or glucomannan, for a smooth sauce)
  • 3 tablespoons fresh lemon juice
  • 1/4 teaspoon salt (or to taste)
  • 1/8 teaspoon black pepper (freshly ground is best!)
  • 12 oz fresh mozzarella cheese thinly sliced

Instructions
 

  • Get started by preheating your oven to 350°F (175°C).
  • Warm a large frying pan over medium heat. Gently wrap each chicken cutlet with a slice of prosciutto.
  • Add the olive oil to the hot pan. Sear a few prosciutto-wrapped chicken pieces at a time for 2-3 minutes per side, until beautifully golden brown.
  • Carefully transfer the seared chicken to a large baking dish. Place a slice (or two!) of mozzarella on top of each piece. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 160°F (71°C) with a meat thermometer.
  • While the chicken bakes, return to the frying pan. Add the sliced garlic and sauté for 1-2 minutes until fragrant and soft. Pour in the chicken broth and increase the heat, scraping up any flavorful browned bits from the bottom of the pan – this is key for a rich sauce!
  • In a small bowl, whisk the xanthan gum into the lemon juice until smooth, then stir this mixture into the broth in the pan. Cook for a few minutes until the sauce slightly thickens. Reduce the heat to very low and season with salt and pepper to your liking.
  • Once the chicken is perfectly cooked, remove it from the oven. Spoon that delicious, savory sauce generously over each piece and serve immediately. Enjoy your healthy and flavorful meal!
