  • 1/4 cup shredded mozzarella
  • 2 tbsp softened cream cheese
  • 1 tbsp mayonnaise
  • 1 tbsp softened butter
  • 1/4 cup finely ground peanuts (or gluten-free breadcrumbs)
  • 1/2 tsp Old Bay seasoning
  • 1/2 tsp salt
  • 1 lightly beaten egg
  • 8 oz cooked salmon, flaked

Instructions
 

  • Start by preheating your oven to a cozy 350°F (175°C).
  • In a medium bowl, combine the mozzarella, cream cheese, mayonnaise, and butter. Whisk them until the mixture is wonderfully smooth.
  • Next, gently fold in the ground peanuts (or gluten-free breadcrumbs), Old Bay seasoning, and salt. Give it a quick taste and adjust the seasoning if needed for your perfect flavor.
  • Carefully incorporate the lightly beaten egg into the mixture.
  • Now, gently add the flaked cooked salmon, mixing just enough to combine everything without breaking up the salmon too much.
  • Using a spoon, drop even portions of the salmon mixture onto a baking sheet lined with parchment paper. Aim for about 4 cakes.
  • Pop them into the preheated oven and bake for 13 to 15 minutes, or until the edges are beautifully golden brown and the cakes feel firm when lightly touched.
  • Serve your delicious salmon cakes warm, perhaps over a bed of fresh baby spinach with a bright drizzle of lemon aioli for an extra burst of flavor!
