Savory Steak Quesadillas: Quick & Healthy!

Delicious and quick low-carb steak quesadillas, perfect for a healthy weeknight dinner. Made with tender steak, melty cheese, and flavorful quesadilla sauce.

Ingredients
  

  • 4 low-carb tortillas (soft taco size)
  • 2 cups shredded Monterey Jack or your favorite melty cheese
  • 12 ounces cooked steak thinly sliced (leftovers work wonderfully!)
  • 8 tablespoons Taco Bell-style quesadilla sauce (homemade or store-bought for ease)

Instructions
 

  • Heat a large non-stick skillet over medium heat and lightly coat with olive oil spray. Lay one tortilla flat in the pan.
  • On one half of the tortilla, layer ¼ cup of cheese, then 3 ounces of thinly sliced steak, 2 tablespoons of quesadilla sauce, and another ¼ cup of cheese.
  • Gently fold the empty half of the tortilla over the filling. Cook for 2-3 minutes per side, until the cheese is wonderfully melted and the tortilla is golden and slightly crispy.
  • Carefully remove the cooked quesadilla from the pan. Wipe any cheese residue from the pan before making the next one to keep it clean.
  • Repeat with the remaining ingredients to create all four delicious quesadillas.
  • Slice each quesadilla into wedges on a cutting board.
  • Serve immediately with extra sauce, salsa, or a dollop of Greek yogurt for a healthy twist!
