Delicious and quick low-carb steak quesadillas, perfect for a healthy weeknight dinner. Made with tender steak, melty cheese, and flavorful quesadilla sauce.
2cupsshredded Monterey Jack or your favorite melty cheese
12ouncescooked steakthinly sliced (leftovers work wonderfully!)
8tablespoonsTaco Bell-style quesadilla sauce(homemade or store-bought for ease)
Instructions
Heat a large non-stick skillet over medium heat and lightly coat with olive oil spray. Lay one tortilla flat in the pan.
On one half of the tortilla, layer ¼ cup of cheese, then 3 ounces of thinly sliced steak, 2 tablespoons of quesadilla sauce, and another ¼ cup of cheese.
Gently fold the empty half of the tortilla over the filling. Cook for 2-3 minutes per side, until the cheese is wonderfully melted and the tortilla is golden and slightly crispy.
Carefully remove the cooked quesadilla from the pan. Wipe any cheese residue from the pan before making the next one to keep it clean.
Repeat with the remaining ingredients to create all four delicious quesadillas.
Slice each quesadilla into wedges on a cutting board.
Serve immediately with extra sauce, salsa, or a dollop of Greek yogurt for a healthy twist!
