  • 3 cloves Garlic peeled and chopped
  • 1 medium yellow Onion diced (about 1/2-inch pieces)
  • 3 cups Chicken or Vegetable Stock (720 ml) (opt for low-sodium for a healthier choice)
  • 3 cups baked Sweet Potato (630 g) packed (from about 2-3 medium sweet potatoes)
  • 1 Tablespoon Kosher Salt or to taste
  • 0.5 teaspoon freshly ground Black Pepper
  • 0.5 cup Heavy Cream (120 ml)
  • 8 slices Baguette 1/2-inch thick (or use gluten-free bread/crackers for a GF option)

  • Prep Your Sweet Potatoes: Start by preheating your oven to a cozy 400°F (205°C). Give your sweet potatoes a good wash, then poke a few holes in them with a fork. Wrap each potato snugly in foil and pop them onto a baking sheet. Let them bake for about 35-50 minutes, or until they're super tender and soft when you squeeze them. Once cool enough to handle, scoop out their sweet flesh.
  • Sauté the Aromatics: While your sweet potatoes are doing their thing or cooling down, heat the olive oil in a large pot over medium heat. Add your chopped garlic and diced onions, stirring often. Cook for 3-5 minutes until they're tender and translucent – this builds a delicious flavor base!
  • Combine and Simmer: Stir the chicken or vegetable stock and the scooped-out baked sweet potato flesh into the pot. Give it a good mix to combine everything. Pour in the heavy cream, bring the mixture to a gentle boil, then lower the heat to a simmer. Let it cook gently for about 10 minutes, allowing all those lovely flavors to blend perfectly.
  • Blend to Perfection: Take the pot off the heat and let the soup cool a bit. Carefully transfer the soup to a blender (you might need to do this in batches) or use an immersion blender directly in the pot. Blend until the soup is wonderfully smooth and creamy. If you like your soup a little thinner, feel free to add a splash more milk or water.
  • Season and Serve: Return your silky smooth soup to very low heat. Taste it and adjust the seasoning with more salt and pepper if you like. Toast your baguette slices or get your gluten-free bread/crackers ready. Serve this warm, comforting, and healthy soup with your chosen bread on the side for a delightful meal!
