Wrap each potato snugly in foil and pop them onto a baking sheet. Let them bake for about 35-50 minutes, or until they're super tender and soft when you squeeze them. Once cool enough to handle, scoop out their sweet flesh.
Sauté the Aromatics: While your sweet potatoes are doing their thing or cooling down, heat the olive oil in a large pot over medium heat. Add your chopped garlic and diced onions, stirring often. Cook for 3-5 minutes until they're tender and translucent – this builds a delicious flavor base!
Combine and Simmer: Stir the chicken or vegetable stock and the scooped-out baked sweet potato flesh into the pot. Give it a good mix to combine everything. Pour in the heavy cream, bring the mixture to a gentle boil, then lower the heat to a simmer. Let it cook gently for about 10 minutes, allowing all those lovely flavors to blend perfectly.
Blend to Perfection: Take the pot off the heat and let the soup cool a bit.
