Ingredients
  

  • 2 cups chopped frozen broccoli thawed
  • 6 ounces cubed cheddar cheese
  • 12 large eggs
  • 3/4 cup cottage cheese
  • 4 cloves minced garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 6 pieces crisp-cooked, chopped bacon

Instructions
 

  • Get your oven ready! Preheat it to 375°F (190°C). Grab a 15x10 inch jelly roll pan, lightly grease it, and then line it with parchment paper, greasing the parchment too. This helps with easy cleanup!
  • Evenly spread your thawed chopped broccoli and cubed cheddar cheese across the prepared pan.
  • In a blender or food processor, combine the eggs, cottage cheese, minced garlic, salt, and pepper. Blend until everything is smoothly combined.
  • Carefully pour this flavorful egg mixture over the broccoli and cheddar in the pan. Finish by sprinkling the chopped, crisp bacon on top.
  • Bake for 20 to 30 minutes. You'll know it's ready when the center is firm and fully cooked. Take it out, let it cool for about 5 minutes, then slice and enjoy your healthy meal!
