Ingredients
  

  • 1 pound cooked shrimp peeled and tails removed
  • 1 large cucumber (about 10 ounces), like an English or regular slicing cucumber
  • 2 green onions thinly sliced
  • 1/4 cup fresh dill finely chopped
  • 2 cloves garlic minced
  • 1/4 cup mayonnaise (or plain Greek yogurt for an even lighter option)
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard (optional, for extra flavor)
  • Salt to taste
  • freshly ground black pepper to taste

Instructions
 

  • Start by washing your cucumber thoroughly. Cut it lengthwise into four long strips, then slice these strips into small, 1/4-inch bite-sized pieces. Place all the chopped cucumber into a large mixing bowl.
  • If your cooked shrimp still have tails, remove them. Then, chop the shrimp into convenient, bite-sized pieces. Add the chopped shrimp to the bowl with the cucumber and gently toss them together.
  • To the bowl, add your thinly sliced green onions, fresh chopped dill, minced garlic, mayonnaise (or Greek yogurt!), fresh lemon juice, and Dijon mustard if you're using it. Stir everything well until all the ingredients are beautifully coated in the creamy, flavorful dressing.
  • Finish by seasoning your salad generously with salt and freshly ground black pepper to your liking. Give it one last gentle stir and enjoy this incredibly refreshing and healthy salad immediately, or chill it for even more crispness!
