Simple Festive Haystack Bites ✨

These easy no-bake haystack bites are perfect for adding a festive touch to your holiday dessert table! Quick to make and deliciously sweet.

Ingredients
  

  • 1 cup butterscotch chips
  • 1/2 cup creamy peanut butter
  • 1/8 tsp salt
  • 1 container chow mein noodles (5 ounce, about 2 cups)
  • 1 cup miniature marshmallows
  • Nonpareil sprinkles for garnish (optional)

Instructions
 

  • Prepare Your Workspace: Start by lining a large sheet of wax paper or parchment paper on your counter to place the cookies on.
  • Melt the Sweet Base: In a microwave-safe bowl, combine the butterscotch chips and peanut butter. Microwave on 50% power for 1 minute. Stir well, then continue heating in short 30-second intervals, stirring after each, until the mixture is completely smooth and melted. Stir in the salt until fully blended.
  • Gently Combine: Add the chow mein noodles and miniature marshmallows to the melted mixture. Using a spatula, gently fold them in until all the noodles and marshmallows are evenly coated. Be careful not to crush the noodles too much!
  • Shape Your Bites: With two spoons, scoop out generous portions (about 2 tablespoons each) of the mixture. Place these individual "haystacks" onto your prepared wax paper.
  • Decorate & Set: If you're using sprinkles, quickly add a pinch of nonpareils to the top of each cookie. Let your Haystack Bites set at room temperature for at least 4 hours, or refrigerate them until they are firm and ready to enjoy.
