  • 2. Ready the Veggies: While your beef preps, preheat your oven to 425°F. In a large mixing bowl, combine the quartered onions, carrots, and potatoes with the vegetable oil, salt, pepper, and balsamic vinegar. Toss everything together until the veggies are nicely coated.
